Hemoglobin is a protein which performs the major function of transporting oxygen to all parts of our body. This protein is made up of a heme group, which contains a complex ring like structure with iron at the centre. Out of the seven VIBGYOR colors of light, it has been found that this complex structure absorbs and emits only the red light more than any other. Therefore, we see the color of hemoglobin as red.
